~ Delicious healthy vegan choc chip blondies <3 ~ 


These blondies are chewy, gooey, rich, and filled with pools of melty vegan chocolate. Fluffy, chewy centre with a crunchy golden top. Oh, and they are also vegan, gluten-free, and refined-sugar free! 

If you struggle with allergies or are trying to eat healthier, these are the perfect treat for you. Their sweetness comes from banana, and un-refined coconut sugar. 

Whats great about these blondies? They come together in just 1 bowl, and they only take 15 minutes to make! 

This is a small batch recipe, which bakes in a loaf pan. You can always double it to make a full size batch, but I prefer making them in the loaf pan so no blondies go to waste.

Equipment and Ingredient notes


Equipment needed: 

- Large mixing bowl

- Average size loaf pan (8x8") 

- Fork / potato masher 

- Wooden spoon / spatula 

- Whisk 

- Measuring cups / Kitchen scales 

- Measuring spoons 


Ingredients needed: 

- Almond Butter

- Coconut sugar (un-refined) 

- Banana 

- Vanilla extract / paste

- Salt

- Oat flour / or another GF flour (oat is my favourite) 

- Baking powder

- Baking soda

- Plant-based milk / oat is best

- Plant-based chocolate / optional (dark is my favourite) 


Step-by-step Instructions 


Step one (the batter): 

- In a large mixing bowl, mash up your banana. 

- Add in your almond butter, coconut sugar, plant-based milk, and vanilla extract. Whisk until combined. 

- Add in the oat flour, baking powder, baking soda, and salt. Mix in with a wooden spoon until a smooth thick batter forms.

- Chop up your plant-based chocolate into small chunks. Add most of it to your batter, and mix in. 


Step two (the baking): 

- Pre-heat your oven 180c (conventional oven) / 160c (fan oven). 

- Scoop your batter into a lined loaf pan, about 8x8". 

- Smooth out the top, and sprinkle on the rest of your chocolate chunks. 

- Place into your oven once hot. 

- Bake for 25 minutes until golden and slightly crispy on the top. 

- Once baked, let cool completely in the tin. 

- When cooled, remove from the tin and cut into 8 equal pieces. 

- Enjoy! 


Storage: These blondies will last for up to 5 days in an air-tight container at room temp. 


The History of Blondies 

Most people believe that Brownies came before blondies, but some evidence actually suggests that blondies came first, maybe even up to 10 years before! 

We are not too sure who the blondie originator was, but they were thought to have originated somewhere in the U.S. 

The first person to publish a 'blondie' recipe was 'Fanny Farmer' in the cook book 'The Boston Cooking-school Cookbook' all the way back in the late 1800s, 1896. The recipe was actually called brownies, but it contained no chocolate and was actually what we now know as a blondie. 

About 10 years after this, 'brownie' recipes as we know them today began to appear. For many years after the 'blondie' recipe was published, they were still refered to as brownies. It wasn't until the 1980s until people began to call them blondies, as they were not brown like what we know brownies as.

Prep time: 15 mins                         Serves: 8                         Cook time: 25 mins 


Ingredients: 

- 1/3 cup + 1 tbsp almond butter

- 3/4 cups coconut sugar 

- 1 large banana (mashed) 

- 2 tsp vanilla extract / paste 

- 1/4 cup plant-based milk

- 1/2 tsp salt

- 3/4 cups oat flour / other GF flour

- 1/4 tsp baking powder

- 1/4 tsp baking soda

- 1/3 cup plant-based chocolate (chopped) / optional
